March National Nutrition Month

National Nutrition Month is an educational campaign focusing on the significance of physical fitness as well as eating nourishing meals. Taking charge of your health and that of your day care children while in your care contributes to overall well being, as well as maintaining a healthy weight, which reduces the risk of chronic illness such as heart disease and diabetes.

Saving Labels

We are hearing Sponsors who are having reviews right now say that the officials from TDA (Texas Dept. of Agriculture) are asking for labels from your whole grain products as well as any CN labels from your combination meat products that you may be serving. 

Please keep a file of your main grain products that you are serving as well as your CN labels. If you serve chicken nuggets, fish sticks, pizza, etc. you must send us a copy of the CN label along with the front of package of the product so we can have a copy in our office also.

Fruit Pizza

This is a super simple version of the well-known fruit pizza.

INGREDIENTS

Crescent roll dough
1 8-10 ounce Low-Fat Vanilla Yogurt
1 (8 ounce) cream cheese
Honey if desired for sweetness
Assorted fruits such as strawberries, grapes, pineapple, kiwi, raspberries, bananas or blueberries.

Directions

Spread crescent roll on the bottom of a 13 x 9" pan. Bake at 325 degrees for 10 minutes. Let cool. Combine cream cheese and yogurt and honey. Spread on the cooled crust. Top with desired fruits.


Banana Krispies

Very simple recipe and the kids love it.
The hardest part is getting the peanut butter to stick to a banana slice.
Once you master that, you're good to go!

INGREDIENTS

Sliced Bananas
Peanut butter
Rice Krispies

Directions

Top the bananas with peanut butter. The secret is that you can't try to spread the peanut butter. Bananas get slippery as soon as you touch them with anything. Use the knife to "push" the peanut butter onto the banana. Place some Rice Krispies in a shallow bowl. Dip the peanut butter covered bananas into the Rice Krispies.

Breakfast Pizza

INGREDIENTS

12 ounce package of sausage links or diced ham
1 cup shredded cheddar cheese
1 package crescent rolls
6 eggs
2 cups frozen shredded potatoes
1/2 cup milk
1/4 t. dried basil
dash of cayenne pepper
1/4 cup Parmesan cheese

Directions

Prepare sausage according to package directions and slice links into 1/4" coins or use diced ham. Separate crescent rolls and arrange on a 12 x 18" pan. Press together to create a crust to cover the entire bottom of the pan. Top with shredded potatoes, sausage coins or diced ham and cheddar cheese. Combine eggs, milk and spices. Pour over cheese layer and top with Parmesan cheese. Bake at 375 degrees for 35-40 minutes or until eggs are set.
