Observations on Monitor Visits

This month we will talk about some of the noncompliance we are seeing on our monitor visits. Please be aware that all providers must follow USDA regulations in order for your meals to be reimbursable.

Milk: All children under the age of 24 months must be served whole milk or 2%. ONCE A CHILD TURNS 2 YEARS OLD THEY MUST BE SERVED Skim, Low Fat or 1% milk. If a child cannot have milk we must have a Dr’s statement. (Reminder : effective October 1, 2017the requirement will be children 24 month and under must have whole milk, children 2 years and over must have low-fat, skim, or 1%. There will be no provision for 2% milk.

Cereals: All cereals served must be 10 grams of sugar or under. Cereals containing over 10 grams of sugar are non creditable. Read labels before you buy! (Effective October 1, 2017 cereals will have to be 6 grams of sugar or under).

Combination Meat products: Foods such as chicken nuggets, fish sticks, pizzas, burritos, steak fingers must have a CN label.

Snack foods: Foods such as potato chips, Veggie straws, Cheetos are not creditable as a vegetable or as a bread. You can serve these foods as extras, but they are not creditable as any of the meal components.

Sweets: Cookies can only be claimed twice a week. If you serve things like Pop Tarts, Donuts, Granola Bars, then along with the cookies, please limit total sweets to twice a week.(Effective October 1, 2017 NO dessert based grains will be creditable.)

KidKare - Minute Menu - Changes Are Coming!!

With the new CACFP meal patterns coming into effect October 1, 2017 all providers who are using Minute Menu Kids Pro or HX will have to upgrade to KidKare. We are training on this program now. For more info you can go to KidKare.com. Log in as 293000005 and password food005.

Do not login using your username and password, as it would automatically switch you over and possibly lose some information. This is our test account. Feel free to add children or menus to test it out. (Don’t add your personal info.) The good news is this program will work on Macs or any device. Call Office for more Information. You can switch over to kidkare anytime before October 1. But you will need to save some of your reports before doing so. Call us before you try to switch over.


Whole Grain Cheerio Bars

Quick breakfast, after school snack or dessert at lunch, these peanut butter cheerio snack bars are a BIG hit every single time! No granulated sugar, no corn syrup and whole grain in the Cheerios!

INGREDIENTS
1/2 cup Honey      3/4 cup Peanut butter            3 cup whole grain Cheerios

Line an 8×8 baking dish with wax paper or foil and set aside. If you use foil, spray it with cooking spray first to help keep your snack bars from sticking to it too much. Combine the peanut butter and honey in a medium saucepan and cook over medium heat until they are both completely melted and well blended. Remove from the heat and stir in the Cheerios and mix well. Once you’ve got the cereal coated well, pour into the baking dish then press evenly to spread the mixture. Refrigerate for 1 hour then remove from the baking dish (using the edge of the foil or wax paper to lift) and cut into bars. Enjoy and store in an airtight container in the fridge.


Overnight Blueberry Baked Oatmeal Crisp

Prep time:15 mins
Cook time:45 mins
Total time:1 hour

For the oats: 
2 cups old fashioned rolled oats                      
2 cups milk of yourchoice                          
1/3 cup sweetener of your choice (I used maple syrup)*   
2 teaspoons ground cinnamon                   
1 beaten egg                                                                                         
1 teaspoon baking powder                        
1½ cups fresh or frozen blueberries (thawed if frozen)

For the crumble:
1 cup old fashioned rolled oats    
½ cup flour*              
½ cup brown sugar                
pinch of salt                                                                            
½ cup coconut oil, melted*

Prepare the oatmeal: Place the oats, milk, sweetener, and cinnamon in a medium to large bowl and stir. Cover with plastic wrap and refrigerate over night. Do not add the egg or baking powder. The next morning, preheat the oven to 350 degrees and grease an 8 x 8" square baking dish. Set aside. Whisk the beaten egg and baking powder into the oatmeal mixture until there are no lumps. Stir in the berries. Pour the mixture into the prepared bakingdish and bake for 20 minutes or until the majority of the liquid is absorbed.

While the oatmeal bakes, prepare the crumble. Stir the oats, flour, and sugar, and pinch of salt together in a medium bowl. Stir in the melted coconut oil and let stand until the oatmeal has absorbed most of the liquid. Top the oatmeal evenly with the crumble and continue to bake for 20-30 minutes, or until puffed, bubbly, and golden brown. The crumble can also be made the day before and stored in an airtight container in the fridge.
Note: I used butter instead of coconut oil
